Hibachi-Style Fried Rice with Vegetables

Hibachi-Style Fried Rice with Vegetables

This Hibachi-style fried rice recipe brings the flavors and flair of Japanese cooking to your kitchen. It’s a versatile dish that allows you to mix and match vegetables as per your preference. The key to great fried rice is to use rice that's been cooked and then cooled, as it fries better and doesn't become mushy.

Ingredients:

  • 2 cups cooked rice, preferably day-old and chilled
  • 1/2 cup carrots, finely chopped
  • 1/2 cup peas
  • 1/2 cup bell peppers, diced
  • 2 large eggs
  • 1/4 cup soy sauce
  • 1 medium onion, chopped
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste
  • Optional: chopped green onions or cilantro for garnish

Cooking Method:

  1. Preheat the Grill: Heat your Teppanyaki grill to a medium-high setting. Ensure it’s hot enough for a sizzle when ingredients are added.

  2. Sauté the Vegetables: Add a tablespoon of vegetable oil to the grill. Add the chopped onions, carrots, peas, and bell peppers. Sauté the vegetables until they are tender and the onions are translucent. Season with a pinch of salt and pepper.

  3. Cook the Eggs: Push the vegetables to the side of the grill. Add a little more oil to the open space, and crack the eggs onto the grill. Scramble the eggs using your spatula and let them cook until they are just set.

  4. Combine and Fry: Mix the scrambled eggs with the sautéed vegetables. Add the cooked rice to the grill. Pour the soy sauce over the rice and toss everything together. Stir-fry for a few minutes until everything is well combined and the rice is heated through.

  5. Garnish and Serve: Sprinkle sesame seeds over the rice. If desired, garnish with chopped green onions or cilantro for an added burst of flavor.

  6. Serving Suggestion: Serve the fried rice as a side dish with other Teppanyaki dishes or enjoy it as a main course by itself.

This Hibachi-style fried rice is not only easy to make but also incredibly satisfying. It’s a great way to utilize leftover rice and vegetables, and you can always add more ingredients like chicken, shrimp, or beef to turn it into a hearty meal. Enjoy the interactive cooking process and the delicious results!
